I Didn't Mint to Turn You On

Curried Potato Salad with Feta, Mint and Radishes


A lot of people cringe at the thought of potato salad, when it comes to a Summertime grill-out. You know it is going to be there and you pray that it is not going to be one of those sickly, mayonnaise-based affairs that already weigh a ton in your tum-tum before you have even tasted it. You hope that maybe you will be treated to a more reasonable vinaigrette-type dressing... but you can't be sure. If it ain't one thing- it's going to be the other thing. But maybe it could be something else altogether...

Potato and mint is a classic combination- refreshing and wonderful in its own right. Together with cumin seed, the humble little potato is also wonderful. Potato and bacon? You gotcha! I wanted to make a potato salad that could hold up as a meal in its own right- not just something to plop on your plate next to your steak or sausages. Start by chopping your potatoes into bite-size chunks and boiling for 7-8 minutes. Drain and put into a dry Teflon pan with a little finely chopped bacon. Sprinkle with cumin seeds and a little madras curry powder. Fry the bacon and potatoes at a moderate heat until the bacon is crispy and dry and the potatoes are golden and brown. Set to one side and allow to cool whilst you chop some spring onions and radishes... you are just a couple of steps away from a wonderful Summer meal! All you need to do after that is to crumble a little feta cheese and you are ready to arrange your salad!

Lay out some fresh salad greens on a plate and season with a little salt and pepper. Now layer your ingredients evenly- potatoes, feta cheese and radishes... sprinkle with spring onion greens and grind with some dried red chili. Drizzle with honey, a good squeeze of fresh lime juice, season with salt and pepper and dress with a splash of olive oil! 

Good food can be so easy- and you will swear that a simple potato salad never tasted so good!

  1. This looks and sounds delicious! I have new potatoes, radishes and mint all growing in my garden at the moment so this will be a perfect way to combine them all when they're ready for picking in a few weeks!
