Bowling for Breakfast Time!

Banana, Peach & Oatmeal Breakfast Cobbler


Exactly... you just thought to yourself "what a load of cobblers!", to the idea of having this for breakfast now, didn't you? Well think again- as this beauty is absolutely healthy, almost calorie-free, full of flavor and as good for you as it is good for starting off your day! In fact- it is so yummy, you may well just go ahead and make is your dessert in the evening too!

There is no fat in this recipe folks- except for maybe a little bit in the yogurt I used to form those little balls of oatmeal- but even that was a low-fat natural yogurt. The sweetness comes from the fruit itself and a little Stevia... the syrup is also simply created by nature doing it's thing... only added sweetness is a tiny drizzle of honey, to give the oatmeal a bit of a glaze. A lot of people might ask themselves (or me!), why go out of your way to cut out the butter, additional fat and sugar... and as with all of those people who go climb high mountains I will answer "because you can". People- it is good to be sensible about what you eat- especially if you can still enjoy it this much!


For the little dumplings, I mixed for one serving, 3 tablespoons of fine-ground rolled oats with 3 tablespoons of yogurt. I added cinnamon, a level teaspoon of Stevia and a tiny pinch of salt. Stir this together well and in 3-4 minutes, you will have a firm "dough" that you can form into these little bite-sized chunks.

The peach and bananas are the easy part, as they do all the work for themselves! Simply cut them into slices and pop them into your frying pan. Whilst it warms up, dissolve 1 level tablespoon of Stevia into a cup of boiling water and keep it at the ready. When the banana and peach begin to sizzle, flip them over once and add the water. Stir once, pop on the lid and let them stew for 3-4 minutes, until the water has evaporated, but left the fruit beginning to soften and become really juicy. I prepared 1 banana and 2 peaches (they were rather small), per person... namely: Me ;-) !

Spoon the mixture carefully into a ramekin or baking form and then place the oatmeal dumplings on top. Press them down and revolve them once, so that they have a chance to soak in some of the juices all around... and then bake in a hot oven, at 350°F for 10 minutes until it begins to bubble furiously. Remove from the oven, turn on the broiler, drizzle with honey and return for 1-2 minutes until the honey froths up and becomes golden brown... easy!

Now THAT's what I call a yummy breakfast!
