Pineapple & Bacon Tandoori Couscous with Avocado & Lime Sauce


Another flavor explosion for you here... are you ready for this or are you going to take cover? ;-) With an avocado and a couple of simple ingredients, I managed to come up with an exotic and unusual dish for supper tonight... pretty cool, what?

I had a little pineapple left over from yesterday, a couple of rashers of bacon and a lot of herbs at home- these, together with a good seasoning of Tandoori spice and Tabasco, made for a wonderfully spicy and refreshing couscous salad. Add a nice ripe avocado and you have a supper ready and waiting in around 15 minutes... ah yes! That would be my kind of meal!


To make the couscous, finely chop some spring onion, parsley and plenty of mint and add it into the same bowl. Into 4 tablespoons of couscous, I added 2 tablespoons of Tandoori powder and 1 tablespoon of Tabasco. Cover with boiling water, stir thoroughly and allow to sit for 5-10 minutes.

Next step is to prepare some crispy flakes of bacon which you can fry or boil as you prefer. Once they are dark and well done, place them on some kitchen roll to absorb any excess fat.

For the yogurt dressing, mix 6 tablespoons of plain yogurt with the juice of half a lime and plenty of finely chopped mint and parsley. Add 1 teaspoon of of honey, the same of sesame oil, some salt and pepper and stir together well.

Once the couscous has cooled off, add the pineapple, Spring onion, Tabasco and lemon juice ... it's coming along really well now- isn't it?

Serve the avocado halves on a bed of the spicy couscous and remember to spoon plenty of the nice dressing over it. Add the flaky bacon bits and you are ready to enjoy! And trust me- you are going to enjoy!
