Size Matters!

Sweet Potato Frittata with Cherry Tomatoes, Zucchini & Oregano


 

Sometimes it has to be something quick and easy. Sometimes it has to be improvised and invented from the last few leftovers you have in the fridge.
And sometimes... that isn't such a bad thing!

This evening, home late-ish from and early-ish cinema showing and after having "behaved" and not given-in to the temptation of various and sundry fast-food offerings- I needed to invent something quick and easy for supper. And this is what it turned out to be! ;-)


 

I don't have an ingredient shot for you this evening my friends... it somehow got lost in transmission... but they were pretty simple and are all visible in the final product

1 small sweet potato, 1 egg, 1 Spring onion, 1 small zucchini, 4-5 cherry tomatoes, parsley, oregano and a little nutmeg. That's all... let's eat!



To make my little frittata, I simply grated the sweet potato coarsely, chopped the Spring onion and parsley up finely, seasoned with salt, pepper and nutmeg and stirred together with a fork... no need to fuss at all with this!

I heated a little olive oil in a small pan, poured in the mixture, pressed it down flat, put on the lid and let it sizzle away gently on a medium heat for 9-10 minutes.


 

It may be small, but it is perfectly formed! And with the tangy, sweet and savory tomatoes and zucchini on top... pretty darned tasty as well!

 

After 10 minutes or so of cooking with the lid on, the frittata was nicely set and ready for flipping over. I did this by placing a saucer on top of the frittata and inverting the pan, then sliding it back in to finish cooking from the other side... old school!

 

I simply sliced the zucchini nice and thin and started them frying in just a little olive oil, stirring occasionally for 3-4 minutes and in the meantime halved the cherry tomatoes and added them with a little salt, pepper and sugar.

I kept the tomatoes on one side of the frying pan and let them sit still most of the time, whereas the zucchini obviously need flipping over a little more often.


 
 
And there you have it... VERY simple, but still rather elegant and totally delicious... what more could you want on a warm Summer evening? Not much! Maybe a glass of chilled white wine... and a second helping! Haha! Enjoy!
