Breakfast with Erik

Prugne Turchi, Cocco, Fiocchi d'Avena & Huacatay in Padella
Pan-Toasted Turkish Plums, Coconut, Oatmeal & Huacatay


 

I am so glad that I went to a Turkish supermarket yesterday for a change, because apart from all of the other wonderful produce they had there, I was able to be these wonderful little plums, known as "Erik", which I really love!

These are slightly tart and extra firm, harvested when they are far from ripe and also enjoyed that way- which makes them a wonderful and refreshing change from the everyday fruits for us... which is terrific!


 

This makes a great change at the breakfast table- tangy, tart, crispy and creamy from the yogurt, it is especially nice now in the hot Summer months.


Huacatay is one of my very favorite herbs- and although it looks like cannabis, you needn't worry, as it has a wonderfully mild lemony/citrus flavor, slightly reminiscent of lemon verbena but much softer to the touch and very pleasant to eat. It originates from Peru, but thankfully I can get it here in Frankfurt- I wish you the best of luck in finding it, because I know it is uncommon... but it is also delicious!

The only other ingredients were of course the Erik's, some nice, thick oatmeal flakes, coconut, raisins, yogurt, cinnamon and honey.


 

What a tangy and refreshing way to start the day!
There is a little work involved, it's true- but it is all very easy stuff and the results are definitely worth it!


 

Step one is to halve and de-stone the plums and to begin toasting them together with the oatmeal and just a little of the grated coconut.

 

 Keep stirring until the Erik start to go brown as well as the oatmeal and coconut flakes...

Once everything is nice and brown, deglaze it with enough milk to coat the bottom of the pan, add more coconut flakes, the raisins and about a teaspoon of cinnamon.

 

Stir and keep stirring until the oatmeal flakes and the coconut have dried-out again and become crispy once more... This should stake between 5-10 minutes, but by then your work is done and after allowing to cool a little, you will be ready to put your breakfast together and enjoy...


 

There are only a few words that can be used to describe how good this tastes... But then a picture does paint a thousand words... and in this case in particular, I am sure the good flavor is here to see ;-)

 
 
Serve the oatmeal and coconut mix with some fresh yogurt, the tender young leaves of the Huacatay, cinnamon and a drizzle of honey to taste.


 

Amazing that something so enjoyable, is also totally easy and most amazingly of all, so healthy! So go ahead and enjoy!
