Bake Me Some Breakfast

Baked Oatmeal with Coconut, Peanut Butter, Honey & Cranberries

 

Ok, the colder season has officially begun and it is time to start making oatmeal for breakfast. What, you don't like oatmeal? What is WRONG with you? I absolutely adore it... And you probably will too if you do this with it!

It looks and sounds naughty and decadent, but actually... It isn't! It's simple, quick and has less naughtiness going for it than a nun!


 

There's probably a lot less peanut butter or regular butter in this than you would put on one slice of bread... Just a little honey... And that's all it takes to make this taste delicious! The cranberries and coconut take care of the rest... With a little help from a touch of cinnamon, which is always good! So... What are you waiting for? Turn on your ovens already!

 

For 2 portions I needed 1 cup each of fine and corse ground oats, 1 cup of coconut, 1 cup of cranberries, 1 tablespoon of honey, 1 tablespoon of peanut butter, about 1 teaspoon of butter, a pinch of salt and plenty of cinnamon.

 

The result is crispy on the outside and moist and chewy on the inside. Of course you could bake it at a lower heat and for a longer time and turn this into great snack bars too... Only I didn't have time for that! I was hungry and wanted my breakfast!

 

Begin by boiling 1 cup of water and stirring in the oatmeal. If that water gets absorbed completely and straight away, add a little more, but start with less... You are not aiming to make a porridge-style oatmeal, just to get it moist.

Next, add the coconut, a pinch of salt and the cinnamon and stir these in well.


 

Once you have a nice, moist, firm mix, add the cranberries, peanut butter and honey, remove from the flame and blend together using only the residual heat in the saucepan.

 

What you are aiming for is a nice firm mix like this.

Basically, when you usually make baked oatmeal. You put the moist mixture into the oven and then bake it until the excess moisture evaporates away. So... Less moisture- less baking!


 

Spoon and smoothed out into a lightly buttered baking dish and add just a tiny bit of extra butter on top... I promise you, this was less than a teaspoon and was more than enough!

Bake at 200 C for 20-30 minutes until golden brown and nicely toasted around the edges... Mmmm!


 

A little something like this! Don't burn your fingers mind! And yes... Do let it cool for a while even if you want to eat it warm! At least a good 10 minutes, I'd say.
 

But after that, you should be able to turn it out, slice it up... And serve!

 

This, a cup (or three) of coffee... And your Sunday will be off to a wonderful start... I guarantee it!

 

And yes, yes, yes... It is as tasty as it looks!
