Small Wonder!

Little Sugarless Cake with Vanilla, Blueberries, Yogurt, Pistachio & Mandarine


Another little "one man" cake, for my one man Sunday breakfast... but don't worry- I am at least willing to share how I made it with you!

It could have just been blueberry pancakes, but instead, I decided to have an hour's patience and make this lovely little cake instead! It required just as little work as pancakes- the only extra thing that was added into the recipe to be honest was the time it took to bake!


Small but scrumptious, I made this little cake using Stevia to sweeten it, so it was also, practically, a "healthy" cake too. The only butter involved was the pat of butter that I used to grease my baking dish- the only fat involved was in the low-fat, plain yogurt. 

As my father, 2 of my brothers and many other members of my family suffer from diabetes, I took it upon myself to try out something that is sugar-free... what's a little pioneer work between friends and family? And now they can make this for themselves... and you can too!


For this small sized cake, I needed just 1 egg, 2 tablespoons of flour, 1/2 teaspoon of baking powder, 1 egg, 2 tablespoons of ground pistachios, the zest and juice of one mandarine orange, 2 tablespoons of plain yogurt, 1 teaspoon of Stevia, 1/2 teaspoon of vanilla essence, 1 good handful of blueberries and a pat of butter for greasing the dish- a great treat and a healthy eat!


Juicy and fruity, with a hint of nuttiness from the pistachio and the vanilla and orange aroma- what more could you want? Only for it to cool off quickly so that you can enjoy!


Mix together the flour, egg yolk, pistachio, mandarin zest, vanilla essence, stevia, baking powder and yogurt and stir into firm paste, then add the juice of the mandarine a little at a time until it becomes a smooth, typical cake batter. A tiny pinch of salt would be a good idea too.


Next, whisk the egg whites and then add these, together with the blueberries and gently fold together.


Once the mixture is smooth and thoroughly well mixed, you are ready to grease you little baking dish and get ready to bake... I hope you already thought to pre-heat the oven!


Spoon the cake mix into your dish, sprinkle lightly with a little more ground pistachio, add a few extra berries and then bake at 180°C for 30-35 minutes until it is fluffy and golden on top- use a toothpick or a piece of spaghetti to check that the cake is baked through in the traditional way.


And there it is! A little masterpiece in just 45 minutes or so... all it needs to do now is to cool off!


And there it is! Yes, it is small- that is a regular saucer you are seeing there in the picture... but hey! That's just half of it... I did have another piece after this one! But the ingredients are so simple it will of course be super-simple to multiply them- the math is easy- 1 egg and 2 tablespoons of flour per person.


And it does look rather delicious!
