Spectacular Sicilian Salad

Insalata di Finocchi, Arance Sanguine, Olive, Capperi, Menta & CrescioneFennel, Blood Orange, Olive, Caper, Mint & Cress Salad


It is indeed the very bleak Mid-Winter- cold, windy, rainy, probably snowing where you are... so why would you want to eat a salad?

Well- one reason would be that you can only get these beautiful Sicilian blood oranges at this time of year! And another one would be that it can be absolutely beautiful! need a couple more? ok! It is inexpensive and it is super simple to make!


This salad has all of the beautiful and vibrant, fresh colors and flavors of Sicily- and it will brighten up even the darkest and dreariest of Winter days!


My ingredients were fennel, blood oranges, olives, capers, mint and water cress and a little salt, pepper, sugar and oil to season and dress these rich and delicious ingredients and to make them taste their very best without overpowering or ruining them.


This will take you less than 10 minutes to make and will make you so happy that you did so! because who could resist a combination like this?


The only preparation work you need to do is to thinly slice the fennel and to peel and slice the oranges. The rest is all assembly and seasoning and still, the result is amazing!


Lay out the fennel slices first and season with a pinch each of sugar and salt and a little pepper. Then add the orange slices and a few shredded leaves of mint, the capers and the olives cut into slices. Scatter with a little cress, season with salt and pepper and trickle with olive oil- why would you want to mess with the great flavors you already have there on that plate? That's right. You wouldn't!


And once you have presented it to your friends, looking beautiful, toss the salad through to get it nicely coated... and lo and behold! It still looks beautiful!


Grab a fork, take a bite, enjoy the freshness and then take another bite. And another. And another. And another...
